They work hard to create something for themselves and their families. They offer DELICIOUS FOOD and drinks.  
They are mobile and able to travel to several different sites. Need I say more?

When booking a food truck, here are some tips to keep in mind:
1. Ensure that you will have the foot traffic to enable them to cover costs of travel/supplies/etc.
2. Ensure that your venue allows for food trucks to be onsite (including permits and insurance)
3.Your average food truck can cater ~100 people an hour. Ensure you hire the right amount of trucks to feed the customers, while making a profit.
4. Ensure you know what type of food your customers will want and hire accordingly.
5. Will there be seating and tables for your customers, or will they take food to go?
6. Where will you set up the food trucks? Think traffic, lines, shade, etc.
7. Give the food truck a good timeline of events so they can make the trip and prep the food/truck.
8.Help clean up after the event. 

When ordering from a food truck:
1. Be patient - the chefs are preparing a wonderful item for you and hundreds of others in a tiny kitchen.
2. Read the menu ahead of time so you know what you want when ordering. Try to refrain from huge customizations.
3. Be efficient - some trucks offer various methods to pay, but sometimes these methods are unavailable. Bring cash.
4. Leave a tip! Even a small tip can mean a lot while working inside the small confines of a truck; delivering a delicious meal to you.
5. Clean up after yourself: don't leave trash everywhere after you finish. Clean up to ensure a good time for everyone!
