Homemade Pumpkin Bread

Vegan and Allergen-Free!

Carlos' homemade pumpkin bread recipe is vegan and free of allergens. It can also be made gluten free (see notes in recipe)! 


Homemade Pumpkin Bread

Servings:

  • 6 - 8, depending on how you cut it!

Ingredients:

Pumpkin Bread

  • One 15 oz can pumpkin puree
  • 1 cup brown sugar
  • 1/4 cup coconut oil (melted)
  • 3 tablespoons unsweetened apple sauce
  • 1 teaspoon maple syrup or vanilla (maple syrup gives a richer taste)
  • 1 1/2 cup flour
    ***Gluten Free: sub flour with 1:1 gluten free flour. Bob's Red Mill or King Arthur brands work best. If you can’t find 1:1, add extra 1/2 cup of choice for gluten free flour that you may be using***
  • 1 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 1/2 teaspoon cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cloves
  • 1 teaspoon allspice
  • 1 teaspoon nutmeg
  • 1/4 teaspoon salt 
  • *Optional* 1 1/2 tablespoon pumpkin spice mix (instead of the aforementioned spices)

Crumble Topping  

  • 1/2 cup flour
  • 1/4 cup brown sugar
  • 2 tablespoons sugar
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon allspice
  • 1/4 cup vegan butter 

Glaze for top

  • 1 cup powder sugar
  • 1 tablespoon oat milk
  • 1/2 teaspoon vanilla

Directions:

Pumpkin Bread

  1. Preheat your oven to 375 degrees. 
  2. Grease bread pan, then add a piece of parchment paper (creating handles to lift bread out when done).
  3. In a large bowl, add pumpkin, brown sugar, melted coconut oil, unsweetened applesauce, and maple syrup and mix together. 
  4. Sift in the flour, baking powder, baking soda, cinnamon, ginger, cloves, allspice, nutmeg, and salt (or just add it to the mix and combine).
    *Sifting will make the bread “airier,” but who really has time to sift all that?
  5. Once combined, add to bread pan. 
  6. Bake for 40 minutes.

Crumble Topping

  1. Combine all the ingredients in separate bowl.
  2. Topping should have wet sand consistency, with some large and small lumps.
  3. Spread crumble topping over bread mix in pan.  

Glaze

  1. Combine all ingredients.
  2. Add to top of bread once cooled.
