Carlos' homemade pumpkin bread recipe is vegan and free of allergens. It can also be made gluten free (see notes in recipe)!
Homemade Pumpkin Bread
Servings:
- 6 - 8, depending on how you cut it!
Ingredients:
Pumpkin Bread
- One 15 oz can pumpkin puree
- 1 cup brown sugar
- 1/4 cup coconut oil (melted)
- 3 tablespoons unsweetened apple sauce
- 1 teaspoon maple syrup or vanilla (maple syrup gives a richer taste)
- 1 1/2 cup flour
***Gluten Free: sub flour with 1:1 gluten free flour. Bob's Red Mill or King Arthur brands work best. If you can’t find 1:1, add extra 1/2 cup of choice for gluten free flour that you may be using*** - 1 1/2 teaspoon baking powder
- 1 teaspoon baking soda
- 1 1/2 teaspoon cinnamon
- 1 teaspoon ground ginger
- 1 teaspoon ground cloves
- 1 teaspoon allspice
- 1 teaspoon nutmeg
- 1/4 teaspoon salt
- *Optional* 1 1/2 tablespoon pumpkin spice mix (instead of the aforementioned spices)
Crumble Topping
- 1/2 cup flour
- 1/4 cup brown sugar
- 2 tablespoons sugar
- 1/2 teaspoon cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground cloves
- 1/2 teaspoon nutmeg
- 1/2 teaspoon allspice
- 1/4 cup vegan butter
Glaze for top
- 1 cup powder sugar
- 1 tablespoon oat milk
- 1/2 teaspoon vanilla
Directions:
Pumpkin Bread
- Preheat your oven to 375 degrees.
- Grease bread pan, then add a piece of parchment paper (creating handles to lift bread out when done).
- In a large bowl, add pumpkin, brown sugar, melted coconut oil, unsweetened applesauce, and maple syrup and mix together.
- Sift in the flour, baking powder, baking soda, cinnamon, ginger, cloves, allspice, nutmeg, and salt (or just add it to the mix and combine).
*Sifting will make the bread “airier,” but who really has time to sift all that? - Once combined, add to bread pan.
- Bake for 40 minutes.
Crumble Topping
- Combine all the ingredients in separate bowl.
- Topping should have wet sand consistency, with some large and small lumps.
- Spread crumble topping over bread mix in pan.
Glaze
- Combine all ingredients.
- Add to top of bread once cooled.
