Do you like granola bars, but want a more fun way to eat them? Are you looking for a healthy snack that can be eaten at any time of day? Try this recipe for homemade No-Bake Granola Bites! If your family has peanut allergies, no worries! Swap out the peanut butter with Sunflower Butter.
The nice thing about this recipe is that there is no cooking/baking involved! You can eat them while you roll them into bite-sized balls, you can wait until they've chilled in the fridge for up to two weeks, or you can eat them two months from now when stored in the freezer!
I used this recipe to make a big batch of yummy bites for a party we hosted for the kiddos classes. They were a hit, and so easy to make!
Yield: Depending on how big or small you make them, about 60 bite-sized balls
Prep Time: 20 minutes
Cook Time: None!
Expiration: If kept in an air-tight container, they will do well in the freezer for at least two months!
Ingredients:
3 Cups of Oats
2 Cups of Creamy Peanut Butter (or sunflower butter!)
2 Cups of Mini Chocolate Chips (we opted for semi-sweet)
2 Cups of Ground Flaxseed
1 1/3 Cups of Crushed Honey Nut Cheerios (or other crunchy cereal, like Rice Krispies)
1/2 Cup of Coconut Flakes, Raisins, or Other Chopped Nuts (optional)
1 Cup of Honey
4 Teaspoons of Vanilla Extract
Instructions:
- Mix all ingredients into a large bowl. You will definitely get your hands dirty for this part, unless you use two spoons to do the mixing for you.
- Use your hands (or a spoon and one hand) to separate the mixture into small, bite-sized balls. How big or small you make them is completely up to you! Mine were no more than 1.5" round, and I yielded about 60 bites.
- If you want to chill or freeze, place the bites on parchment paper in an air-tight container. Make layers of parchment, bites, parchment, bites, so that they don't all stick together.
- Chill for up to two weeks in an air-tight container or freeze for up to two months in an air tight container.
That's it! Even if your kids aren't fans of healthy eating, I think these bites will trick them into loving it! We've eaten them for breakfast, snacks on the go, lunch boxes, afternoon snacks, dessert, literally any time of day is good to enjoy these.
